Hot summer weather calls for lighter meals, and these salads make a perfectly light but filling main dish. And the best part? The preparation is both simple and quick. Last week I shared some of my favorite ways to use a rotisserie chicken. If you have any left over, toss it in my Black Bean and Mango Salad.
- Grocery list:
- Green lentils
- Dry quinoa
- 1 bag frozen sweet corn
- Tamari
- 1 pound package extra-firm tofu (I buy Trader Joes or Sprouted Tofu brand.)
- Maple syrup
- 4 portobello mushrooms
- 4 small summer squash
- 1 small eggplant
- Mixed greens
- 4 small chicken breasts (Or get a rotisserie chicken from the supermarket.)
- 1 bag spring mix lettuce
- 2 large mangoes
- 1 can black beans
- 1 bulb fennel
- Ready-made balsamic dressing (I love Annies Balsamic Vinaigrette.)
