My 15-year-old daughter, Luca, likes eggs and she sometimes reminds me to eat them.
They kind of freak me out—the way they come into the world? I’m not into the visual!
But not too long ago, I was kidless with a quiet moment to myself, and I made an egg omelette with avocado and spinach and tomatoes.
And it was so nice, and so different from my usual Greek yogurt. It was hearty.
